Ingredients

  • 2 cups
  • 3 tablespoons olive oil
  • 1 clove garlic
  • 1/2 onion
  • 1 red bell pepper
  • 1 orange bell pepper
  • 1 yellow bell pepper
  • 1 yellow squash
  • 1 large fresh tomato, grated (I chopped)
  • 1/2 cup veggie broth
  • 1/4 cup parsley, roughly chopped
  • (use whatever veggies you have on hand that are fresh and tasty)
