Last up is The ADA Vegetarian Cookbook. Because I love the classic Middle Eastern snack, I tried the recipe for Broccoli BlackBean Hummus, which is super healthy with yogurt instead of olive oil, and the addition of broccoli
To make these vegan sweet potato and blackbeanenchiladas you don’t need to buy expensive products, all the ingredients are cheap and really easy to get, except maybe the vegan cheese, but it’s optional and you can also use our vegan cheese recipe, it’s made with potatoes and carrots and it tastes like real cheese
As far as the protein in this dish goes, on another day, I would have opted for tempeh or tofu but the addition of blackbeans instead actually worked pretty well -- a nice substitute if you are trying to avoid or reduce soy
