  • 1/4 cup fresh Italian parsley, chopped
  • 1 tablespoon tomato paste
  • 5 tablespoons grated pecorino romano, parmesan, or asiago cheese (+ more for coating)
  • 1/2 teaspoon Kosher salt
  • Cracked black pepper to taste
  • 1 egg
  • 3 tablespoons Italian bread crumbs (+ more for coating)
