  • olive oil
  • 2 cloves garlic
  • 1/2 onion
  • 1 cup chopped potatoes
  • 1 parsnip
  • 1/2 tsp cumin seed
  • 1/2 tsp hot smoked paprika
  • 1/2 tsp chipotle chili powder
  • 1 portobello mushroom
  • 1 small head
  • 1 cup shredded sharp cheddar cheese
  • salt and pepper to taste
