Ingredients

  • 12 ounces boneless pork loin or pork shoulder
  • 1 cup homemade bread crumbs
  • 1 large egg, lightly beaten
  • 1 teaspoon water
  • salt and black pepper (to taste)
  • 1 tablespoon olive oil
  • 9 ounces dry spaetzle
  • 4 slices bacon, cooked crisp and crumbled
  • 3 tablespoons unsalted butter
  • 1 tablespoon chopped fresh Italian parsley
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • salt and black pepper (to taste)
  • 10 ounces shaved Brussels Sprouts (shave by hand or buy packaged)
  • 1 cup chopped onion
  • 4 slices bacon, cooked crisp and crumbled (about 1/2 cup)
  • 1 tablespoon bacon drippings or extra virgin olive oil
  • 2-3 cloves garlic, minced
  • salt and black pepper (to taste)
  • 3 tablespoons berry vinegar or red wine vinegar
  • 1 tablespoon brown sugar (or to taste)
