Wafers and Lemon Cheesecake

Ingredients

  • - 15 vanilla wafers;
  • - 250 g mascarpone;
  • - 250 g ricotta;
  • - 2 eggs;
  • - 100 g powder sugar;
  • - 1 tablespoon of lemon zest;
  • - 2 tablespoons of lemon juice

Instructions

    - Prepare a baking tray, add baking sheet and then arrange the wafers; make sure you don't leave space between the wafers;
    - Put together in a bowl: the sugar, the eggs, salt, lemon zest and juice, the mascarpone, ricotta, and mix well, until smooth and creamy;
    - Add the mixture to the wafers layer and bake on medium heat for 20 minutes;
    - Refrigerate for at least 2 hours before serving.
