  • 1 Small Seedless Watermelon. Cut into thin 3/4 inch slices then cut into bite size shapes (I used a small cookie cutter)
  • 1 Cup (8 ounces) Mascarpone Cheese
  • 1/2 Cup Heavy Cream
  • 1/2 tsp Clear Vanilla
  • 1 TBS Honey
  • Zest from 1 Medium Lime
  • 1/4 tsp (or to taste) Chipotle Spice (add a small pinch at a time and taste to get your desired taste)
  • Additional pinches of Sweet paprika to get desired color
  • Ribbons of fresh mint for Garnish
