Ingredients

  • This flatbread is perfect for a weeknight dinner or a lazy weekend brunch at home. If you're vegetarian, eliminate the pancetta (and add mushrooms, if you want) and you've got a super satisfying meatless meal too!Ingredients: 2 oz pancetta
  • 3 tsp olive oil, divided
  • 1/2 yellow onion, diced
  • 2 cups spinach leaves, rough chopped
  • Salt and pepper, to taste
  • 2 Naan flatbreads *Find them in your grocer's bakery department. You can also sub pita or pre-baked pizza crust too
  • 1 cup shredded mozzarella
  • 3/4 cup fresh Parmesan, grated
  • 2 eggs
  • White vinegar
