Ingredients

  • 60 minutes
  • 14- ounce can chickpeas (garbanzo beans), or 2 cups cooked
  • 1 head of cauliflower
  • Extra virgin olive oil
  • Coarse sea salt
  • 1/2 cup cherry tomatoes
  • 1/2 cup olives (any type)
  • 1/4 cup chopped Italian Parsley
  •  
  • Dressing
  • 3 Tbsn olive oil
  • 1 tablespoon white wine or apple cider vinegar
  • 1 tsp lime juice (or more to taste)
  • 1 tsp cumin (or more to taste)
  • 1 tsp chili powder (or more to taste)
  • 1 tbsn chopped red chilis (optional)
  • Freshly ground black pepper
  • Drain chickpeas and let dry, or dry with towels.
