Continue to break the tomatoes into smaller bits every time you stir. I added a pinch of red pepper flakes for a kick, because I gotta have my red pepper, but you can leave that out and have a nice rich and mild tomato sauce instead
It takes awhile, a couple hours on and off and it's really helpful to get everything chopped and prepped and lined up in order beforehand as some of it needs to be added in a timely fashion and makingthe roux inthebeginning can't be messed up or you have to start over---keep stirringthe roux
