Ingredients

  • 1/4 cup canola oil
  • 2 pounds* cubed chicken breast meat or chicken tenders
  • 1/2 tablespoon ground cumin
  • 1/2 tablespoon chili powder
  • 1/2 tablespoon salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon butter
  • 3/4 cup chopped yellow or white onion
  • 1 tablespoon minced garlic
  • 1/4 cup chopped roasted poblano pepper**
  • 1 1/2 tablespoons finely diced green chilli pepper (I used a serrano***)
  • 1/3 cup flour (I recently used Better Batter Gluten Free Flour, and it worked great too)
  • 4 cups chicken stock
  • 2 tablespoons salsa verde
  • 1/2 tablespoon chili garlic paste
  • 1/2 tablespoon chipotle Tobasco
  • 1/2 cup heavy cream
  • 1 cup white beans (from a can, or cooked)
  • pico de gallo (garnish)
  • white rice (garnish)
  • 3 green onions, sliced (garnish)
  • Add the flour, stir to incorporate, and
  • cook for about 2 minutes.
  • Simmer for 5 minutes and add the cream and white beans stir to
  • incorporate.
