Transfer chicken to a plate and cover to keep warm and return the onions to the pan. While onions are cooking, prepare the chicken by drizzling with oil, then seasoning with salt and pepper (to taste) and Italian herbs

Layer pasta, chicken, sauce, and cheese into dish. Cook pasta until about 2 minutes underregular cook time (probably about 5-6 minutes). Bake uncovered at 350' for 25 minutes or until hot golden brown and bubbly. Remove lasagna from oven and sprinkle 1/2 cup gluten free bread crumbs on lasagna, return to oven and brown the bread crumbs for 5 minutes
This very tasty dish, I believe, successfully brings together regional products such as Bresse chicken, white wine from the Jura region and comté cheese
Remove the chicken from the pan and set aside on plate. Remove from the pan with a slotted spoon and set aside, leaving the hot bacon grease in the pan (turn down the heat while prepping the chicken)
