Did you know that you can buy already shelled Pistachio's. They are salty and crunchy and I would eat way too many if I allow myself and then I'd be talkin uncomfortable so I decided to make a few Biscotti with some of them

I substituted the raisins for the dried cranberries and added some whitechocolate chips. Stir in oats and raisins (or cranberries and whitechocolate chips)

I added grated lemon zest and dried cranberries to add a festive twist to the cookies, and then, I spread melted whitechocolate onto the baked cookies and finished them with a sprinkling of chopped dried cranberries
