Ingredients

  • *Whole Wheat Sweet Potato Bread*
  • Makes 16 to 18 servings
  • 105 g of plain flour (3/4 cup)
  • 105 g of whole wheat flour (3/4 cup)
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cardamom
  • 1/4 tsp salt
  • 60 g of low fat plain yogurt (1/2 cup)
  • 2 large free range eggs, beaten
  • 50 g of sugar or 7g of splenda sugar substitute (1/4 cup)
  • 60 ml fat free milk
  • 1 1/2 tsp vanilla
  • 270 g of cooked, peeled and mashed sweet potatoes (1 cup)
  • 40 g of chopped pitted dates (1/4 cup)
  • 30 g of chopped toasted walnuts (1/4 cup)
