Ingredients

  • 90 grams organic coconut oil 40 grams coconut sugar 3 tablespoons light agave 2 eggs- beaten 2 teaspoon good quality vanilla essence 3 cups (approximately 480 grams) plain wholemeal flour ¼ cup (60 ml) low fat milk 100 grams unsweetened apple puree 160 grams finely sliced apple (peeled) ½ teaspoon cinnamon ¼ cup (60 grams) chopped walnuts 1 teaspoon bi carb/baking soda Instructions Preheat the oven to 180 degrees Celsius (fan forced). Melt the coconut oil in a medium bowl, add the coconut sugar and agave and mix well. Add the eggs, vanilla and flour to the mix. Stir until it is almost combined and then add the milk. Mix using your hands until it forms a crumbly/soft dough. Using a lined slice tin, place approximately ½- 2/3 of the mixture into the base of the tin and press down until the base is covered and the mixture is firmly pressed into the tin. Spread the apple puree over the mixture and then cover with the sliced apple. Sprinkle the cinnamon over the apples. Add the walnuts and baking soda to the remaining mixture and use your hands to mix into the dough. Crumble the mixture over the top of the apples as evenly as possible. At this stage, you can sprinkle a teaspoon of raw sugar over the top if you want extra sweetness! Bake in the oven for 20 minutes, or until the slice is golden and cooked but be careful not to over cook it. The slice with harden up/become more stable as it cools. 3.2.1311
