  • 200 grams organic fine semolina 65 grams bakers flour 70 grams butter, melted 100 grams warm water 1 teaspoon orange blossom natural extract 25 grams of organic dried figs, cut in half + 4 tablespoons warm water adding more if necessary 1 teaspoon allspice 1 teaspoon butter 50 grams oven roasted sesame seeds 100 grams organic honey, warmed flour for dusting additional sesame seeds for garnish (optional) Instructions In a large bowl, combine semolina and flour; add melted butter. (see Notes); set aside for 1 hour. In a blender, food processor or Thermomix, add dried figs, allspice, 1 teaspoon butter and 4 tablespoons warm water and 50 grams oven roasted sesame seeds; mix until well combined and desired texture. If using Tmx, speed 5, 3 seconds; scrape down and repeat if necessary; set aside. Pre heat over to grill setting and dry roast sesame seeds; about 5 minutes; remove and set aside. With a golf-ball size of the fig mixture, roll into small logs and or desired shape; set aside. On a lightly floured surface, roll semolina dough out and gently and lightly knead until desired texture and feel. Take a handful of dough, place one of the logs inside and pull dough over so it is completely sealed; roll and slightly press down to desired shape gently. I twisted the small pieces of dough, then connected a few pieces together to bake; see photo in blog post. Pre heat oven to 190C. Bake for about 20 minutes or until lightly golden brown. Remove from oven. In a small ramekin, heat honey and drizzle honey and additional sesame seeds if using. Enjoy with your favorite cup of Moroccan tea! NOTE: Prep time does not include having paste to sit for an hour.
