here today. As much as I love to bake… when the summer heat reaches over 100 degrees it seems a bit silly to turn on the oven. For days like this, it’s nice to enjoy a cool and refreshing treat. This smooth and creamy dessert starts with a delicious yogurt panna cotta, then is topped with homemade lemon curd and a bit of fresh fruit. The lemon curd can be made several days in advance, and is delicious on waffles or pancakes, and lovely as a cake or cupcake filling.
Serve pannacotta in a plate with raspberry sauce and garnish with berries. Pour the pannacotta mixture into molds and place in the freezer for about two hours
Pannacotta can be flavored in various ways and can also be served in different ways, with fruits or caramel sauce or chocolate sauce or any fruit syrup
I've doubled up the lemoncurd in these too - there's lemoncurd mixed in with the cheesecake base and then generous dollops of lemoncurd swirled through the top to give you intense bursts of lemoncurd and to make them look pretty
Lemoncurd, especially made with Meyer Lemons, is heavenly eaten straight off the spoon, on crackers, in trifles, layered in cakes, sandwiched in macarons or even as I made today - on top of cheesecake
In a small pan mix the yolks with sugar, zest and the lemon juice. Using a pastry bag press a small amount of curd on one of the almond cookies and cover it with another one
