Ingredients

  • 1 small (or 1/2 large) red onion, chopped, rinsed and drained
  • 1/4 cup fresh lime juice
  • 1 large ripe mango, peeled with the fruit roughly chopped off the pit
  • 1 small (or 1/2 large) red bell pepper, diced
  • 1/4 cup coarsely chopped fresh cilantro
  • 1 clove garlic, minced
  • 1/4 cup orange juice
  • 1 fresh jalapeno, finely chopped (optional)
  • Salt and pepper to taste
