Ingredients

  • 250 g milk (full fat)
  • 2 egg yolks
  • 30 g cornflour (cornstarch in the US, amido di mais in Italia)
  • 60 g caster sugar
  • Zest of 1 lemon
  • 1 tsp vanilla essence (or fresh vanilla seeds, if you’re so inclined)
  • 1 tbsp Strega liqueur (optional)
  • 80 g butter
  • 200 g water
  • 3 medium eggs, beaten (QB), approx 150g
  • 150 g flour – plain, all-purpose or low-protein 00
  • Pinch of salt
  • 40 g caster sugar
  • Zest of half a lemon
