One of my favourite Mediterranean dishes which is known under a variety of names, commonly under the name of Baba Ghanoush a delicious smoky aubergine blended up with tahini and lemon juice that can be served as side dish, salad, dip or mezze with grills, it is somehow similar to Za’alouk (a North African salad)

Zucchini, cauliflower, mushrooms, and onion rings are dipped in a thick batter and fried. 3 medium unpeeled zucchini. Drop from slotted spoon into 375° F oil. Fry zucchini, mushrooms, and cauliflower about 2 minutes

I use my spiralizer but you could easily cut small strips with a knife or use shreds from a grater. If you are looking for a new way to incorporate more veggies into your diet, try raw zucchini noodles

For this recipe, I used ground Italian pork sausage, zucchini, cooked rice , tomatoes, garlic, mozzarella cheese, cream of mushroom soup and chicken broth
