Ingredients

  • makes about 1 1/2 quarts
  • 4 tablespoons unsalted butter or extra-virgin olive oil
  • 1 white onion, sliced
  • 8 to 9 large cloves garlic, sliced thinly
  • 1 1/2 pounds zucchini, about 4 medium 4 cups chicken or vegetable broth or water
  • 1/3 cup packed basil leaves
  • Salt and pepper
