Ingredients

  • 1 lb 94% lean ground beef (feel free to use chicken, turkey, or a more beef/pork combo)
  • 1/4 cup plain bread crumbs
  • 1 egg 1/2 finely chopped onion
  • 1 tbsp fennel seed
  • 1 tbsp dried oregano
  • 1 tbsp dried parsley
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tsp red pepper flakes
  • 1/4 tsp paprika
  • 1 clove of garlic
  • pinch of allspice
  • 2 large diced tomatoes (I actually used a combination of three random types of tomatoes I had around, since I don't think it matters much)
  • 1 large can of whole, stewed tomatoes
  • 1/2 finely chopped onion
  • 1/2 tbsp dried oregano
  • 1 cup stock
  • 1/2 cup white wine
  • 1/4 cup lemon juice
  • 1/4-1/2 cup kalamata olives, halved
  • 2 tbsp balsamic vinegar
  • 3-4 basil leaves, chopped
  • 1 clove of garlic
  • salt and pepper to taste
