The original recipe at here suggests using chicken breasts with bones but I have used boneless and skinless chickenthighs instead because I believe that chickenthighs are always moist and tender when they are cooked for longer period of time
Jamie's recipe calls for it to be served with a watermelon and noodle salad, which my daughter did make - but we only photographed the chicken because we didn't quite have enough salad ingredients so it looked kind of funny…not photograph worthy, you could say
Its also a one pot dish which we love as it saves on washing up, the vegetable content is also infinitely variable depending on what you have in the fridge and frugal too as it uses the humble chickenthigh, this cut is normally much cheaper and much more flavourful than the chicken breast
Bring a pot of salted water to a boil and add your chickenthighs. Roast for a further hour, or until golden and cooked through – the chicken is cooked when the thigh meat pulls easily away from the bone and the juices run clear
Remove the chicken from the refrigerator to come up to room temperature. Place the chicken on the baking sheet, and place the lemon halves in the cavity
