SriLanka is known for its production and export of tea, coffee, coconuts, rubber and cinnamon. potatoes, minced jalapeno, coconut milk and curry powder
Set in a buffet style, diners can enjoy traditional dishes including fish ambul thiyal, which is SriLankan’s famed sour fish curry, Negombo tempered prawns, beef baduma (tender beef marinated with crushed black pepper), mutton black curry, polos ambul (young jack fruit curry), pol rotti with katta sambol (coconut flat bread with spicy gravy), battered fried chili mushroom, SriLankan hoppers and sweet SriLankan desserts
I used sweetened coconut condensed milk instead of regular condensed milk and used a lot less sugar. Growing up in SriLanka, one of my favorite sweet “treat-snacks” was my mom’s potato toffee
love cake, mango fluff, milk toffee and vattalappam, a richly spiced coconut custard. Dark roasted curry powder, a fine attention to the balance of salty-sour-sweet, wholesome red rice and toasted curry leaves, plenty of coconut milk and chili heat
Add the coconut and mix well. 150 g fresh coconut or 150 g desiccated coconut. 1/4 cup water (if using desiccated coconut, I recommend using 1/8 cup water and 1/8 cup coconut milk for better fla)
