These muffins are part of my low sugar baking series where I replace part of the sugar with a sweet fruit, root, or squash puree, adding not only natural sweetness but also fiber, nutrients, and deliciously unique flavors
Fresh cauliflower and buckwheat flour bread is another recipe in the fruit/vegetable puree series. dip spatula in oil and make a line in the middle of the batter, the line will close, but the oil in it will allow the batter to open during baking, forming a nice crust and prevent spontaneous cracking of the crust everywhere
