Loosen cake from sides of pan. Invert cake onto a wire rack and cool completely. Bake about 18 minutes or until cake top springs back when touched. Cool cake in pan on a wire rack for 10 minutes. To make ahead, wrap cooled cake in freezer wrap or foil and freeze for up to 1 month
Anyway, having done all that, I also subsequently noticed that David gives recipes for Cornish saffron cake and a Devonshirecake, a “variation” that can be made with one of my favourite foodstuffs – clotted cream

Cream Tea or "Devonshire Tea comes from the County of Devon in England. My Hippy in the Kitchen version is the traditional cake with my favorite Pastry Cream Filling and Strawberry or Raspberry Jam
In a small mixing bowl, and using electric beaters, cream margarine, sugar and treacle. When the cake and topping/filling are both cool, sandwich the two sponges together with the filling then use the other half to ice the top
