Love letter cookies are extremely coconutty and gulamelaka and coconut pairs really well together. I got the inspiration for this granola from love letter cookies leftover from the recently concluded Chinese New Year celebrations
I topped my smoothie/pudding off with generous spoonfuls of really easy to make gulamelaka syrup, but if you've got the time, I strongly encourage you to try this with mocha fudge sauce

First, I made the gulaMelaka syrup. In fact, I reckon that they are as good as the store bought ones particularly like the ones that I regularly buy from Bengawan Solo bakeries in Singapore
Besides the cake, we also love their old school bun (soft but slightly chewy in texture) such as shredded coconut with gulamelaka and ikan bilis fillings
After which they will be coated with a layer of prepared shredded coconut (fresh shredded coconut steamed with a mixture of salt) and serve together with gulamelaka syrup (melted palm sugar)

We ordered two types - the "Stracciatella" and "GulaMelaka" cake. Similarly, the gulamelaka cake was a clever invention too - thick palm sugar syrup layered with cream in between and around the smooth-moist textured cake
