The entire process has to be done on low flame / low heat as it makes delicious payasam. Do not over roast rice and also do not over grind the rice, that will affect the texture of payasam
I like such milk based payasam with sugar more than rice with jaggery payasam. This is a very easy sabudana kheer recipe, just cook the sago pearls, add it to the thickened sweetenedmilk, add fried cashews, cardamom powder and you are done
Howeverwe can use a part of broken rice or vermicelli or sago pearls in badam kheer recipe. Traditional kheer recipe is a pudding like sweet made with broken basmati rice

really don't know why. Pal Paysam is a south Indiansweet dish made of milk, rice and sugar. The authentic pal payasam is just rice, milk and sugar and needs no additional garnishing
* While cooking the caramel, make sure wedon't blacken them, if not it will have bitter taste. When wemake caramel, at first it will become hard, but it will dissolve, so don't panick
Note- You can replace jaggery with sugar, might needto add a much more quantity tomake it perfect. This is creamy, perfectly sweet & topped with goodness of ghee along with nuts & raisins
Paal payasam is the one only payasam I love,I just don’t care much for any other payasams,though I make and have some nothing like paal payasam, paal payasam can be loosely translated intomilkkheer with rice,but the quantity of rice is very less here and the kheer will be of thin consistency
