Carrot cake is tricky tomake, many are too dry, too sweet, too much spice, too much icing, the wrong icing…I don’t judge, I am not a pastry chef, I just want that stinking good carrot cake again
In the midst of packing up and moving to our new home, I somehow have had time to use what few kitchen supplies I had not packed up tomake these little treats
When I make a carrot cake or whatever else, I WILL be eating at least one large slice everyday, so I prefer the ingredients to do my body favours instead of take away my energy
Anyway, what really makes this cake is the sticky toffee sauce. I actually like to throw a little corn syrup in whenever I make caramel so that it doesn't crystallize
