There was a bit of extra batter which turned into a couple of cupcakes for two hungry boys I was going to fill the cake with lemon mousse using a recipe from InaGarten that I’ve used in a pinch and loved
And to go with the common thread of this week I nabbed this recipe from none other than InaGarten. (I know what you're thinking - you were waitressing why didn't you eat the food there - it's because in the evenings we would only serve coffee and cake otherwise we would not go down the block for a meal)
(This will prevent the cake from sticking to the towel. ) As soon as you remove the cake from the oven, loosen it around the edges and invert it squarely onto the prepared towel
Grease a 9 by 13 by 2-inch cake pan. In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar on medium speed until light yellow, about 2 minutes.
