•Dash pink Himalayan salt. Adapted somewhat from my lemon coconut truffles. These seriously take 5 minutes to make. •1/2 cup coconut flour. •2 Tbsp extra virgin coconut oil. Roll into 10 balls, place on parchment lined sheet and stick with chocolate chips if desired (if you add chocolate chips before rolling they will be harder to roll as they kinda fall apart *I did this-just extra careful). 1/2 cup coconut flour. 2 Tbsp extra virgin coconut oil
Make lemon sized balls with it. If you make more urundais, increase the gravy. Coming to today's dish, Paruppu Urundai Kuzhambu, basically it's deep fried lentil balls in a tomato-coconut gravy

Though the tart in the book was a savory one, I loved the idea of using creamy coconut milk to make a custard filling to complement a pastry crust made with coconut oil
These modaks are quick to make and need ingredients found commonly in any pantry. You can stop at the balls stage and serve them as pink colored balls too
You can make it with the choice of your colour red, pink, green, orange. Mix well coconut, cardamom powder, sugar, roasted and chopped cashew nuts, raisins, tutti fruitti to make the filling
My biggest tip- When forming the ‘treats’ (Okay, balls but I don’t want to say balls so they are treats), lightly rinse your hands every so often, as the coconutmakes it quite easy to fall apart
I didn't make a homemade marshmallow cream frosting this time, I just used a can of prepared frosting and mixed it with the marshmallow cream and it was totally perfect
