I don’t know exactly why this particular vegetable is called as “Mangalore cucumber“. Believe me this yellow cucumber is amazing as it finds it’s use in all varieties of side dishes that are prepared in Udupi like peel it’s skin and make chutney, cube it’s rind to make curry or stir fry, scoop out it’s seeds to make rasam or tambli
Heat some oil in a small pan, add the urad dal, mustard seeds, when it starts spluttering, start adding the garlic, saute till golden, add the curry leaves, mix and add to the cooked vegetable
This curry goes well with rice and dal or even as a side to rotis, if you don't find this variety of cucumber, I think you can do it with regular one too

A simple preparation that can be done in a jiffy and relished wholeheartedly… I would suggest to try this with neychoru and the Mangalore Chicken Sukka, and it is a meal to kill
