Another thing that worked out well is that the potatoes and artichoke can adapt to various oven temperatures, so I just set the oven for what I needed to cook the lamb, and was able to cook everything at the same time and have it finish together, which is always nice when you're trying to complete several steps at once, and have everything still be hot by the time it reaches the table
Slow roasting is a very forgiving method, so if you leave it in the oven for longer than the prescribed time or if your oven temperature is a bit off, it still comes out wonderfully juicy

I did boneless leg of lamb, 1 whole chicken (bone in, but back bone removed, so it can be splayed) and 1 rack of pork ribs so I doubled the sauce. Since it cooks first in the oven I did that part on sunday, then we let it warm up in the back of the grill for about 20 min
