I came up with the idea for this dessert after experimenting with these Upside Down Chocolate Cheesecakes and deciding to try and make them even healthier by removing the base (or more accurately, the topping), using quark and adding a homemade date caramel
A ricotta cheesecake recipe in Martha Stewart's Cakes* seemed like a great candidate and with a little minor tweaking was perfect not just for using up the cheese
I really like sweets with apples, I find the classic apple cake irresistible, but as you may have realized by now I love to experiment with cheesecake and therefore today I propose this Christmas version with baked apple and flavored with cinnamon
I used a combination of low-fat quark, double cream and Smetana. It did help, I would say, I only had one rather small crease… I saw another method of crease free cheesecake baking on TV a few days ago, I will give it a try the next time I will make a cheesecake again and let you know
We have for example 'túró', which I usually call cottage cheese/curd/or quark. there are no cream cheeses here in Hungary than in the US that they usually use for this

In this cheesecake I used quark and cream cheese and flavored with fresh lemon juice. Cheesecake is very good and I like the baked version compared to the frozen one
