I’ve had several requests for a vanilla version of the Best-Ever Chocolate QuinoaCake and I can promise you I’ve spent many sad weekends trying but I haven’t quite mastered it yet
I could have gone the dark chocolate route, or the vanillacake route, or even something with fresh fruit (likely blueberries), but something about carrot cake was pulling me in
In fact, it tastes suspiciously a lot like cornbread with a hint of vanilla. Before I get onto a pretty awesome experiment I pulled off with an overabundance of quinoa flakes (thank you Costco yet again for making me buy a lifetime supply of something I don't use all that much
vanilla extract. These quinoa carrot cake muffins are packed with tons of nutrients. You get a boost of vitamin A, fiber, and beta-carotene from the carrots, and then some good protein, carbs, and healthy fats from the quinoa
Add quinoa, orange juice and zest, yogurt, vanilla extract and sweetener of your choice to a blender or food processor, and blend into a smooth consistency
In a separate bowl or jug combine the eggs, coconut oil and vanilla extract and mix well to combine. These Carrot, Raisin and QuinoaCakes make a great lunchbox snack for the kids
Stir in oat and quinoa flours. This was my very first raw cupcake. I still want to do some tweaking on the cupcake part, and I'd make mini cupcakes next time
