This is my first attempt at a sugarfree 'large' round cake. Much lighter than a carrot cake and although it is missing out on some of that fabulous flavour you get from good unrefined sugar

Well I suppose they're really no added sugar ginger cakes as there's sugar in the fruit but using fruit purees is a method I've heard of (and used) before to cut down on sugar in cooking, it also normally means you can cut down on the fat too as the fruit puree adds a lot of moisture
Sprinkle the cake with roughly chopped walnuts and sultanas and let it sit for 20 minutes before baking. Bake cake for approximately 1 hour or until a skewer inserted into the cake comes out clean. 1/4 cup honey or 1/4 cup Splenda granular, sugar substitute. 2 tablespoons sultanas
